Medicana Sivas Hospital Dietitian Eda Ünal talked about the benefits of molasses to the human body and stated that this medicinal product can be harmful if the correct consumption and storage conditions are not applied. Ünal stated that molasses consumed above 70 degrees Celsius or exposed to temperatures above 70 degrees Celsius produces carcinogenic substances.

Dietitian Eda Ünal talked about the benefits of molasses, which is mostly consumed for anemia, and said, “Moscow is a medicinal food that has been used frequently since the past and has survived to the present day. It is a sweet-tasting food produced with products such as mulberry, grape, and carob. Thanks to the high amount of vitamins and minerals it contains, it is a very useful food for our body. We consume molasses in different ways, especially with ingredients such as calcium, potassium and phosphorus. We often prefer it especially for Anemia, which is known as anemia in our environment. The calcium it contains contributes to the development of bones and teeth, and at the same time, it prevents anemia as it provides iron retention. Thanks to the potassium it contains, it helps to keep blood pressure in balance. Thanks to the antioxidant it contains, it is very effective in strengthening immunity. Especially in the winter months, during this period when flu infections are common, we can often prefer molasses. Due to the high carbohydrate and calorie content of molasses, we need to use it carefully.”

Noting that molasses can produce carcinogenic substances when its temperature rises above 70 degrees Celsius, Ünal said, “Moscow is a food that we often use, especially in children who are in developmental age, and in adults to strengthen immunity. We consider one or two tablespoons to be an appropriate portion for adults, due to the sugar content it contains, and we recommend it to be loaded with one or two dessert spoons for young children. Rather than being consumed on an empty stomach in the morning, we recommend that it be consumed as an extra on a plate with protein, carbohydrate and fat balance for breakfast. Especially for young children, we can use molasses as a sweetener instead of using sugar in the foods they eat. Since it has a creamy structure, we can take advantage of its sweetening feature by spreading it on bread like chocolate or adding it to desserts. When molasses is used by cooking at high temperatures, it is beneficial to use it carefully, as it may contain carcinogenic substances when it rises above 70 degrees Celsius.

We should store the handmade molasses in a closed room and out of the sun, with its mouth closed. If we are using molasses that we bought ready from the market, we need to store it in the refrigerator. We should be very careful not to encounter high temperatures when we use it in the food we eat. Because when molasses is used at temperatures above 70 degrees Celsius, it creates substances that can have a carcinogenic effect. It is worth paying attention to this," he said.
